Mom’s Turkey Pie

While I was growing up the day after Thankgiving alway meant Turkey Pie.

Equipment

  • 2 x 9" Pie Pans

Ingredients

Sift together into a bowl:

  • 1 ½ cups unbleached all-purpose flour
  • ¾ teaspoon salt
  • 1 ½ teaspoons baking powder

Cut in

  • cups vegtable shortening

In a separate large bowl stir together to melt:

  • cup boiling water
  • cup vegtable shortening additional

Wait for the water/shortening mixer to cool and add in:

  • 1 teaspoon grated lemon rind
  • 1 egg

Combine the flour and water mixtures together, and mix well. Chill. Preheat oven to 425°F.

In the bottom of two 9" pie pans combine:

  • Chunks of leftover Turkey
  • Heated gravy
  • Leftover stuffing optional

Roll pastry to fit pie pans. Cover the filling with the pastry. Cut vent holes in pastry. Bake at 425°F for 20 to 25 minutes.
