Mushroom-stuffed Chicken Breasts


From The Fannie Farmer Cookbook

Preheat the oven to 350° F

Melt in a skillet:

2/3stick of butter

Add, stirring often till the mushrooms turn very dark and absorbs all the butter:

1/2pound finely chopped mushrooms
1/2teaspoon salt
1/4teaspoon freshly ground pepper

Remove from the heat and stir in:

3/4cups bread crumbs
1/4teaspoon nutmeg

Divide equally and stuff:

4chicken breasts, skinned, boned and halved

Place chicken, seam side down, in a shallow baking pan. Cover with:

3/4cups bread crumbs
1cup heavy cream

Bake for 30 minutes until chicken is lightly brown.
