Carrot Cake

From Cherry Pie & a Hot Cup of Java: The Mar-T Cafe, North Bend Washington

Pre-heat oven to 350° F. Grease and flour a 13x9" pan.

In a large bowl combine:

2cups flour
1cups sugar
2teaspoons baking soda
1/4teaspoons salt
2teaspoons cinnamon
2teaspoons cloves
4teaspoons nutmeg

Beat into dry ingredients, and mix until smooth:

1 1/2cups vegetable oil
4eggs

Mix in:

3cups grated carrots
1/2 - 1cup chopped walnuts

Pour into pan. Cook 45 minutes to 1 hour at 350° F.

Frosting

12ounces cream cheese
1teaspoon vanilla
1/2 - 3/4cup powdered sugar

Cream cheese and vanilla together. Sift in sugar to taste. Frost cake when cool.
